Oven Baked Pecan Chicken

  • 1 cup prepared biscuit mix
  • 2 teaspoons paprika
  • 1 cup finely chopped Texas Pecans
  • 1/2 cup evaporated milk
  • 1/2 teaspoon salt (or seasoned salt)
  • 1/2 teaspoon poultry seasoning
  • 2 or 3 pounds of chicken pieces
  • 1/2 cup melted butter


Combine biscuit mix, seasonings and pecans. Dip chicken pieces in evaporated milk, then coat well with dry mixture. Place in a 13x9x2-inch baking dish. Pour melted butter in the bottom of pan. Bake at 375 degrees for 1 hour. Note: Use the little chicken “drumettes” for a delicious appetizer!
